The bright fresh flavors of this sauce turn a simple sandwich into something special
CHIK'N PATTY SANDWICHES WITH FRESH CHIMICHURRI SAUCE

Healthy Chef Lilia’s cost-cutting tip: Manchego is a delicious cheese with a rich, nutty flavor, but if you find this particular cheese a bit on the pricy side, you can use cheddar cheese or Swiss cheese instead. Regular or low fat both work well!
Ingredients-
Prep time- 15 minutes
Cook time (patties)- 10-15 minutes
Makes about 1 cup sauce
Chimichurri Sauce
1/2 cup chopped cilantro leaves
1/2 cup chopped flat-leaf parsley
1/2 cup olive oil
1/4 cup red wine vinegar
1 Tbsp. minced garlic (about 2 lg. cloves)
1 Tbsp. minced shallot (or red onion)
1/2 tsp. Kosher salt or sea salt
1/4 tsp. red pepper flakes
Patties
4 Quorn™ Chik'n Patties, grilled as per pkg. directions
4 whole grain, thin-style sandwich rolls
8 tomato slices
4 slices Manchego cheese*
Instructions-
1) Combine all chimichurri sauce ingredients in a small bowl. Stir well.
2) For each sandwich, spread 1 tablespoon of the chimichurri sauce onto cut-side of bottom half of roll. Top each with 1 cooked Quorn Chik'n Patty, 1 slice of cheese, 2 slices of tomato and 1 more tablespoon of the chimichurri sauce. Cover each sandwich with 1 roll top.
* Any remaining chimichurri sauce may be kept covered in the refrigerator for up to 2 days. Serve at room temperature.
* This sauce also makes a great topper for Quorn Turk'y Burgers and Quorn Naked Chik'n Cutlets (all cooked as per package directions).
