Healthy Chef Lilia's recipe of the month


Hot pepper jelly is the secret ingredient that adds a bit of spark to this tasty burger topping:


TURK’Y BURGERS with MANGO, PINEAPPLE & ALMOND “RELISH” 


Healthy Chef Lilia’s cost-cutting tip: Fresh herbs can be a bit pricy at the grocery store and you often end up buying more than you need…and throwing away the rest!  So, why not plant your own herb garden?!  If you don’t have a back yard, all it takes is a sunny window ledge and a couple of small flower pots.


Ingredients-

Prep time- 15 minutes
Cook time (burgers)- 10-15 minutes
Makes about 1-1/2 cups relish


Relish


1 Tbsp. hot pepper jelly**
2 tsp. honey
1/2 cup ripe mango, diced (about ½ of a med. mango)
1 can (8 oz.) crushed pineapple, well drained
1/4 cup seeded, diced tomato
1 tsp. fresh, minced ginger
1 Tbsp. chopped mint leaves
1 Tbsp. chopped scallions
1 Tbsp. toasted, chopped almonds

Burgers


4 Quorn™ Turk’y Burgers, grilled as per pkg. directions
4 cups arugula leaves

Instructions-

1) Combine all the relish ingredients in a small bowl.  Stir well.
2) Arrange 1 cup arugula leaves on each serving plate.  Top each with 1 cooked Quorn™ Turk’y Burger and 2 heaping tablespoons of the relish. 


* Any remaining relish may be kept covered, in the refrigerator for 1-2 days.  Serve cold or at room temperature.
** Hot pepper jellies are available at most supermarkets & specialty food stores & can range in “heat.”  If you prefer a mild relish, simply use apricot or peach preserves instead.
