In honor of Cinco de Mayo, Healthy Chef Lilia has created a festive
CILANTRO-LIME TEX-MEX CHIK’N WING SALAD.

Perfect for a party, picnic, or light dinner at home, this zesty dish is a guaranteed crowd-pleaser and good for you, too.
Healthy Chef Lilia’s cost-cutting tip: Shop your pantry! No black beans? Kidney or pinto beans work just as well. Don’t have time to run to the market for fresh avocado?
Try using a can or two of drained, quartered artichoke hearts. Canned, Mexican-Style corn is a colorful substitute for plain canned corn. While fresh juice is optimal, you can substitute bottled, unsweetened lime juice in a pinch.
Ingredients-
Makes 5 servings (about 5 cups)
Dressing
3 Tbsp olive oil
2 Tbsp fresh lime juice (+ 1 Tbsp to toss with avocado, per below)
1/2 tsp lime zest
1/2 tsp cumin
1/4 tsp hot pepper sauce (optional)
1/4 smoked Spanish paprika (available at most specialty food and some grocery stores; can also be ordered through www.penzeys.com)
1/4 tsp chili powder
1/8 garlic powder
salt to taste
Salad
1 can (15 oz.) black beans, rinsed & well drained
1 can (15 oz.) whole kernel corn, well drained
1/2 cup diced red bell pepper
2 scallions, chopped (about 1/4 cup)
1 small, ripe avocado, peeled, pitted, diced (tossed with 1 Tbsp lime or lemon juice)
¼ cup chopped cilantro leaves
salt & pepper to taste
1 package Quorn™ Southwestern Chik’n Wings green leaf lettuce leaves and/or lime wedges, as needed
Instructions-
1) Dressing: In small bowl, whisk together all dressing ingredients until well combined; set aside.
2) Salad: In large bowl, stir together beans, corn, red pepper, scallions, avocado and cilantro. Season with salt and pepper. Toss well with the dressing; set aside. Cook Quorn™ Southwestern Chik’n Wings per package directions.
3) Spoon salad mixture onto platter. Arrange cooked Quorn™ Southwestern Chik’n Wings on top. Garnish with lettuce leaves and/or lime wedges, if desired. Serve.
Creative leftovers:
It’s a wrap: Roll salad and a sprinkle of shredded Mexican cheese blend into a flour tortilla for a great snack.
Hello, nachos: Layer tortilla chips, salad and coarsely chopped Quorn™ Southwestern Chik’n Wings on a foil-lined, rimmed baking sheet. Srinkle with Mexican cheese blend and pop under the broiler until cheese is just melted. Serve with a few dollops of low- fat sour cream.
