Lite Quorn Stroganoff

A lighter version of the traditional recipe

Let's Cook!

  1. Heat oil in large sauté pan over MED.-HIGH heat. Add onion; cook 3-5 minutes or until softened.
  2. Add mushrooms, thyme and Quorn™. Sauté 3 -4 minutes until mushrooms softened. 
  3. Stir in ¾ cup of the vegetable broth, paprika and mustard. Bring to boil; reduce heat. Simmer 20 minutes. 
  4. Dissolve cornstarch in remaining vegetable broth; stir into Quorn™ mixture. Continue simmering, while stirring until sauce thickens. Season with salt & pepper. 
  5. Remove the pan from the heat. Stir in yogurt. Serve with rice and green beans, if desired.

2 Tbsp. vegetable oil
1 lg. onion, finely chopped
2 cups mushrooms, sliced
2 tsp. fresh thyme
1 ½ cups Quorn™ Chicken-Style Tenders
1 cup vegetable broth, divided
2 tsp. paprika
1-2 Tbsp. wholegrain or Dijon mustard
3 tsp. cornstarch
3 Tbsp. plain yogurt
salt & pepper, to taste
