Quorn™ Filo Purses

Let's Cook!

  1. Preheat oven to 400ºF.
  2. Heat olive oil in large pan over MED.-HIGH heat. Add Quorn™ Tenders, onion, zucchini, eggplant, tomato, red pepper, garlic, thyme & oregano. Simmer 8-10 minutes or until vegetables are tender and most of the liquid has evaporated. Cool to room temperature. 
  3. Place 1 sheet filo dough on large cutting board; spray lightly with cooking spray, top with remaining filo sheets lightly spraying with cooking spray between each sheet. Cut into 4 even squares. 
  4. For each "purse," place small mound of Quorn™ filling mixture onto center of each filo square. Carefully lift each corner and gently twist to form purses; secure with twine. Repeat with remaining sheets of dough. 
  5. Place purses on baking sheet and bake for 5-8 minutes, or until golden brown. Remove twine and serve immediately, drizzling a ring of sauce (recipe below) on the plate.


PREPARING THE SAUCE

  1. Heat olive oil in small pan over MED.-HIGH heat. Add shallot, garlic, tomato and lemon juice. Cook, while stirring, 3-5 minutes or until just simmering.
  2. Season with salt & pepper; stir in parsley.

2 Tbsp. olive oil
1 pkg. Quorn™ Tenders, thawed
½ cup onion, diced
1 small zucchini, diced
1 cup eggplant, diced
2 cups tomatoes, peeled diced
1 red pepper, diced
1 clove of garlic, minced
1 tsp. thyme
½ tsp. oregano
salt & pepper, to taste
4 sheets filo dough
non-Stick cooking spray

For the sauce:
2 tsp. olive oil
1 small shallot, chopped
1 clove garlic, minced
1 cup tomato, diced
1 Tbsp. fresh lemon juice
salt & pepper, to taste
1 Tbsp. parsley, chopped
