Quorn™ Stuffed Potatoes

Let's Cook!

  1. Preheat oven to 400ºF.
  2. Scrub potatoes under running water. Bake 1 hour or until cooked through. 
  3. Toss Quorn™ Tenders in small bowl with scallions, olives, goat cheese, mixed herbs and crème fraiche or sour cream. Season with salt and pepper. 
  4. Slice tops off cooked potatoes lengthwise; scoop out about half of the center of each potato and discard. Place scooped-out potatoes on greased baking sheet. Fill each potato evenly with the Quorn™ mixture. 
  5. Drizzle each filled potato with oil. Return to oven; bake 10 -15 minutes longer or until heated through. Serve warm.

4 large baking potatoes
1½ cups Quorn™ Tenders
2 scallions, thinly sliced
2 Tbsp. canned, sliced black or green olives, drained
¼ cup goat cheese, crumbled
1 tsp. dried mixed herbs de Provence
2 Tbsp. crème fraiche, or sour cream
salt & pepper, to taste
2 Tbsp. olive oil
