Let's Cook!
- Place Quorn™ Tenders in large bowl. Stir in soy sauce, sherry and sugar. Cover and refrigerate for 30 minutes to marinate.
- Toss cooked pasta in sesame oil. Set aside.
- Heat sunflower oil in wok or large sauté pan over HIGH heat. Add ginger and garlic. Quickly sauté for 1 minute. Remove Quorn™ from marinade; add to wok (reserve remaining marinade). Sauté 3 minutes or until just heated through.
- Add scallions, peppers and mushrooms. Continue to sauté 3 -4 minutes longer, until vegetables are tender.
- Add reserved marinade and Hoisin sauce. Simmer for 2 - 3 minutes; toss in linguini. Continue to simmer 1 minute, or until just heated through. Serve immediately.
Variations
Add a little finely chopped hot, red chili pepper or a dash of hot chili oil to make an extra spicy Lo Mein. For a fried rice variation, replace the noodles with 1½ cups cooked long grain rice. Omit the Hoisin sauce. Add the rice with the reserved marinade. Stir-fry until piping hot; quickly add one large beaten egg and stir fry for a further 1 - 2 minutes, until the egg has set.
