Quorn Lo Mein

Great Asian-style meal

Let's Cook!

  1. Place Quorn™ Tenders in large bowl. Stir in soy sauce, sherry and sugar. Cover and refrigerate for 30 minutes to marinate.
  2. Toss cooked pasta in sesame oil. Set aside. 
  3. Heat sunflower oil in wok or large sauté pan over HIGH heat. Add ginger and garlic. Quickly sauté for 1 minute. Remove Quorn™ from marinade; add to wok (reserve remaining marinade). Sauté 3 minutes or until just heated through. 
  4. Add scallions, peppers and mushrooms. Continue to sauté 3 -4 minutes longer, until vegetables are tender. 
  5. Add reserved marinade and Hoisin sauce. Simmer for 2 - 3 minutes; toss in linguini. Continue to simmer 1 minute, or until just heated through. Serve immediately.

Variations
Add a little finely chopped hot, red chili pepper or a dash of hot chili oil to make an extra spicy Lo Mein. For a fried rice variation, replace the noodles with 1½ cups cooked long grain rice. Omit the Hoisin sauce. Add the rice with the reserved marinade. Stir-fry until piping hot; quickly add one large beaten egg and stir fry for a further 1 - 2 minutes, until the egg has set.

2 Tbsp. dry sherry
1 tsp. sugar
1 pkg. Quorn™ Chicken-Style Tenders
2 cups cooked linguini or rice pasta
2 tsp. sesame oil
2 Tbsp. sunflower oil
tsp. fresh ginger, minced
1 clove of garlic, minced
½ cup scallions, sliced
1 lg. red pepper, thinly sliced
1 lg. green pepper, thinly sliced
1 cup mushrooms, washed, sliced
2 Tbsp. Hoisin sauce
