Quorn Stuffed Shells

Delicious twist of the traditional version.
Instructions:
- Heat oil in large sauté pan over MED.-HIGH heat. Add onion and garlic; sauté 3-5 minutes, or until softened.
- Stir in flour. Gradually whisk in milk. Continue to cook until thickened, stirring constantly. Add spinach, salt, pepper and nutmeg. Cover, reduce heat, simmer 4-5 minutes. Stir in ricotta and Quorn, until Quorn is heated through.
- Generously spoon the mixture into prepared shells. For each serving, arrange 3 stuffed shells on warm serving plate. Top with warm marinara sauce and sprinkle with Parmesan cheese, if desired.
