Quorn Stuffed Shells

Delicious twist of the traditional version.

Instructions:

  1. Heat oil in large sauté pan over MED.-HIGH heat. Add onion and garlic; sauté 3-5 minutes, or until softened.
  2. Stir in flour. Gradually whisk in milk. Continue to cook until thickened, stirring constantly. Add spinach, salt, pepper and nutmeg. Cover, reduce heat, simmer 4-5 minutes. Stir in ricotta and Quorn, until Quorn is heated through. 
  3. Generously spoon the mixture into prepared shells. For each serving, arrange 3 stuffed shells on warm serving plate. Top with warm marinara sauce and sprinkle with Parmesan cheese, if desired.

Ingredients

2 Tbsp. olive oil
1 sm. onion, diced
1 clove garlic, minced
1 Tbsp. flour
½ cup milk
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
salt & pepper, to taste
1/8 tsp. nutmeg
1/3 cup ricotta cheese
½ cup Quorn Beef-Style Grounds
6 lg. pasta shells, cooked as per pkg. directions, kept warm
Prepared marinara sauce, as needed
Grated Parmesan cheese, as needed
