Quorn Grounds Chili Stuffed Baked Potato

A hearty baked potato filled with chili con Quorn – perfect comfort food for any occasion.


  • 12oz Bag of Quorn Grounds
  • 1 tbs. vegetable oil
  • 1 onion, diced
  • 1 peeled garlic cloves, thinly sliced
  • 1 cup green and red bell peppers, diced
  • 14oz can chopped tomatoes
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 cup kidney beans, drained
  • salt and pepper to taste
  • 4 large potatoes, baked and still hot
  • 1/4 cup Monterey Jack cheese, shredded
  • Green onions sliced and sour cream, as needed


1. Heat the oil in a large skillet over a medium high heat and saute the onion for 4-5 minutes or until softened.
2. Add the peppers, Quorn Grounds, tomatoes and spices and cook on a low heat for 8-10 minutes.
3. Stir in the kidney beans, season with salt and pepper and continue to cook for 3-5 minutes.
4. Slice open each baked potato and fill with a generous amount of Chili mix. Top each with 1 tbsp. cheese. Serve immediately with chopped green onions and a spoonful of sour cream.
