Ingredients

  • 1 bag Quorn Meatless Patties
  • 2 cups cooked red and white quinoa
  • 1 red onion, finely diced
  • 1/3 cup raisins
  • 1/3 cup pomegranate seeds
  • ¼ cup toasted pine nuts (dry toasted in pan)
  • 1 small bunch cilantro, parsley, and mint – roughly chopped
  • Handful arugula leaves
Dressing:
  • 1 small red chili pepper, finely diced
  • Juice of 3 medium lemons
  • 1 tsp sugar
  • 1 clove garlic, crushed
  • Salt and freshly ground pepper to taste

Method

  1. Make the dressing by mixing all the ingredients together
  2. Mix together the quinoa, onion, raisins, pomegranate seeds, pine nuts, herbs, and arugula
  3. Cook the Quorn Meatless Patties according to back of pack instructions, slice and serve with the quinoa salad
