Choice of nut; almonds, walnuts or pistachios recommended
For the dressing:
¼ cup canned coconut cream
¼ cup extra virgin olive oil
1 lemon, zested and juiced
1 tbsp apple cider vinegar
2 tbsp pure maple syrup
1 tsp Dijon mustard
½ tbsp poppyseeds
¼ tsp salt
Method
To make the dressing, combine all ingredients aside from poppyseeds into a food processor and blend until smooth.
Stir in the poppyseeds and set aside.
Prepare the Summer Salad by cooking the Quorn ChiQin Pieces per package instructions (sauteed on pan with salt and pepper)
Combine all of the salad ingredients of choice in a bowl and drizzle the Lemon Poppyseed dressing on top. The dressing makes enough to serve 6 people, or keep in your fridge for 2-3 days!
