Quorn Meatless Cauliflower Curry

If you like it hot, you will love this aromatic chunky vegetable and Quorn meat free Grounds curry. It’s absolutely packed with flavor, with a fiery kick of curry.

Ingredients

  • 12oz Bag Quorn Meat Free Grounds
  • 1 large potato, peeled and cut into bite sized chunks
  • 1/2 cup cauliflower florets
  • 1 tbs. curry powder
  • 13 1/2oz can of coconut milk 
  • 1 cup green peas
  • 2 handfuls of fresh spinach
  • Salt and black pepper to taste

Method

1. Blanch the potatoes and cauliflower in boiling water for 8-10 minutes. Drain.
2. Pour the coconut milk and curry powder into a large skillet and heat gently.
3. Add the Quorn Grounds, potato and cauliflower to the sauce. Bring to the boil, reduce the heat and cook over  alow heat for 8 minutes. Add the spinach and peas and cook for 2 more minutes. Season to taste.
Serve with naan or chapati bread and rice
