Ingredients

  • 1 bag (12 oz) Quorn Meatless Grounds
  • 1 tbsp of oil
  • ½ red onion, finely diced
  • ½ red pepper, finely diced
  • ½ yellow pepper, finely diced
  • 2 cloves garlic, finely chopped
  • 1 tbsp smoked paprika
  • 2 tbsp tomato paste
  • 1/2 cooked green/French lentils
  • 3/4 cup whole wheat breadcrumbs
  • 1 egg yolk, beaten
  • 8-10 basil leaves, finely shredded
  • Season to taste with salt & freshly ground black pepper

Method

  1. Pre-heat the oven to 400°F
  2. Heat the oil in a frying pan and gently fry the onion and peppers for 3-4 minutes, now add the garlic and smoked paprika and cook for a further 2 minutes
  3. Place the onions and peppers into a bowl and combine the Quorn Meatless Grounds, tomato paste, lentils, breadcrumbs, egg, basil and seasoning, mix gently until all the ingredients are combined
  4. Divide the mixture in to 6- 8 equal amounts and form into a burger shape
  5. Place onto a lightly greased baking sheet and cook for 10-12 minutes. Serve in a bun of your choice with fresh green salad
