Ingredients
- 1 bag Quorn Meatless Patties
- 2 cups cooked red and white quinoa
- 1 red onion, finely diced
- 1/3 cup raisins
- 1/3 cup pomegranate seeds
- ¼ cup toasted pine nuts (dry toasted in pan)
- 1 small bunch cilantro, parsley, and mint – roughly chopped
- Handful arugula leaves
- 1 small red chili pepper, finely diced
- Juice of 3 medium lemons
- 1 tsp sugar
- 1 clove garlic, crushed
- Salt and freshly ground pepper to taste
Method
- Make the dressing by mixing all the ingredients together
- Mix together the quinoa, onion, raisins, pomegranate seeds, pine nuts, herbs, and arugula
- Cook the Quorn Meatless Patties according to back of pack instructions, slice and serve with the quinoa salad
