Quorn Meatless Chicken Bahn Mi

Try this vegetarian version of a Bahn Mi, a delicious Vietnamese sandwich on a crispy French baguette with tangy pickled vegetables and a hint of heat


  • 2 Quorn Naked Chik'n Cutlets
  • 2 tbs. soy sauce
  • 1 tbs. fresh ginger root, peeled and chopped
  • 1 clove of garlic, minced
  • 1 tbs. rice wine vinegar
  • 1 tbs. vegetable oil
  • 2 tbs. boiling water
  • 1 tbs. sugar
  • 2 tbs. rice wine vinegar
  • 1 carrot, peeled and cut into thin strips
  • 1/2 cucumber, cut into thin strips
  • 2 green onions, sliced
  • 1 tbs. toasted sesame seeds
  • 1 tbs. of chopped fresh herbs, such as cilantro and mint
  • 2 French baguettes, sliced in half lengthwise
  • 1 tbs. low fat mayonnaise
  • 1/2 tbs. Sriracha chili sauce


  1. Preheat the oven to 400F
  2. To prepare the pickled vegetables, dissolve the sugar in the hot water. Mix the ingredients then cover and refrigerate. This can be prepared in advance and will keep in the refrigerator for up to a week.
  3. Combine the ingredients for the glaze in a bowl, add the Quorn Naked Chik'n Cutlets and coat well, place on a baking sheet and cook for 10-15 minutes until golden brown.
  4. Mix the mayonnaise and hot sauce together, then spread on the baguette. 
  5. When the glazed Quorn Naked Chik'n Cutlets are cooked, pile the sandwich with pickled vegetables and Quorn Chik'n, and enjoy!
