Quorn Beef Strips Pasta Bake

Ingredients

  • 1 tbsp olive oil
  • 1 red onion, chopped
  • 1 tsp garlic purée or diced garlic
  • 1 tsp dried basil
  • salt and pepper
  • 1 pack Quorn Meatless Beef Strips
  • 2 small cans chopped tomatoes
  • 1 tbsp sugar
  • 4.5 cups fusili pasta
  • 2.25 cups mozzarella, grated
  • ¾ cup cheddar, grated
  • 1/8 cup vegetarian parmesan, grated
  • 1 tsp dried oregano

Method

  1. Warm the olive oil in a large oven proof pan, then add the onion, garlic, basil and a pinch of salt and pepper and fry gently until soft
  2. Add the Quorn Meatless Beef Strips and continue to cook.
  3. When the strips are cooked through, add the tomatoes and sugar and bring up to a gentle simmer. This is a good time to start cooking your pasta (in a large pan with plenty of boiling, salted water).
  4. When the sauce has reduced to a thick, rich red, it's ready.
  5. Season to taste, then add the drained, al dente pasta.
  6. Mix well and level off in the pan.
  7. Top with the mozzarella, cheddar, hard cheese and oregano
  8. Bake at 425°F for around 10 minutes until melted and just starting to bubble
  9. Serve it gooey and stretchy and delicious, with plenty of salad and a generous helping of garlic bread.
