Quorn Meatless Chicken Cutlet & Citrus Salad

Try this light and refreshing, protein-packed salad perfect for any season.


  • 1 pack Quorn Garlic & Herb Cutlets
  • 4 oz cooked rice
  • 2 Tbsp. olive oil
  • 1 Tbsp. orange or lemon juice
  • 1 orange, sliced
  • 1 medium red pepper, sliced into strips
  • 2 scallions, chopped
  • cucumber, diced
  • 1 Tbsp. parsley, finely chopped
  • 1 Tbsp. mint, plus extra for garnish
  • Salt and freshly ground black pepper
  • To serve: 5 oz mesclun salad


  1. Cook the Quorn Garlic & Herb Cutlets following the instructions on back of pack.
  2. Mix the olive oil and orange/lemon juice together in a bowl, season to taste.
  3. Stir the orange/lemon dressing into the rice while warm to allow the rice to absorb the dressing. Stir in the remaining vegetables and herbs, season to taste.
  4. Place the salad on a platter, arrange the rice mixture over the top and slice the Quorn Garlic & Herb Cutlets and place over the top of the rice salad. Garnish with mint leaves.
