Quorn Meatless Sardinian Bake

  • 9oz Quorn Meat Free Grounds
  • 1 tbs. olive oil
  • 1 red onion, diced
  • 2 peeled garlic cloves, minced
  • 2 tbs. vegetarian sundried tomato pesto
  • 2 cups strained unsalted tomatoes or canned unsalted crushed tomaotes 
  • 3/4 cup vegetable broth
  • 1 tsp dried oregano
  • salt and pepper to taste
  • 8 slices of stale bread with crusts removed
  • 4oz ball of mozzarella, lower fat, sliced
  • 3 tbs. vegetarian Parmesan 
  • 2 tbs. fresh basil leaves finely chopped


1. Preheat the oven to 400F.
2. Heat oil in a large skillet over medium heat. Add onion, saute 4-5 minutes. Add garlic and cook for 2 minutes. Stir in the pesto, tomatoes, vegetable broth, oregano.
3. Bring to the boil and add the Quorn Grounds. Stir in the basil and remove from the heat. Make sandwiches with the bread slices and mozzarella slices.
4. In a large oven proof container, pour a light layer of the Quorn Grounds mix then place the bread and cheese on top of this. Pour the remaining Quorn Grounds on top ensuring the bread is submerged in the sauce then sprinkle the vegetarian Parmesan over. bake in the oven for 15-20 minutes until piping hot.
