Quorn Breaded Cutlets with Tomato and Mozzarella

This recipe is perfect for a light & healthy dinner without sacrificing flavor or protein.

Ingredients

  • 4 Quorn Naked Chik'n Cutlets, thawed
  • 4 tbs. olive oil
  • 4 slices whole wheat bread
  • 2 eggs, beaten
  • 1 ball mozzarella, sliced
  • 2 plum tomatoes, sliced
  • 8 fresh basil leaves
  • 1/2 cup zucchini, diced
  • 1/2 cup carrot, diced
  • 1/2 cup celery, diced
  • Salt and pepper to taste

Method

  1. Preheat the oven to 350F
  2. Blitz the bread in a food processor to make the fine breadcrumbs
  3. Dip the Quorn Naked Chik'n Cutlets in the beaten egg and then the breadcrumbs
  4. Heat 3 tbs. of the oil in a skillet and fry the breaded Quorn Cutlets on each side until golden brown. Season with salt and pepper to taste. 
  5. Place a slice of tomato, a slice of mozzarella and a basil leaf on each Cutlet and place in the oven for a few minutes until the cheese is melted.
  6. Meanwhile, fry the vegetables in the remaining oil until softened. Season with salt and pepper. Serve the breaded Quorn Cutlets on the bed of vegetables.
