Quorn Chik'n and Lentil Salad

This healthy and light salad is packed with protein and fresh flavors.

Ingredients

  • FOR THE SALAD:
  • 4 Quorn Naked Chik'n Cutlets, thawed
  • 1 tbs olive oil
  • 1/2 cup beluga lentils, cooked
  • 1/3 cup beets, cooked and cut into thin strips
  • 2 handfuls of arugula, washed and drained
  • 2 tbs. toasted pumpkin seeds
  • 1/2 small red onion, finely sliced
  • 12 black grapes, washed and halved
  • 1 tbs. fresh herbs such as cilantro and mint, chopped
  • FOR THE DRESSING:
  • 2 tbs. olive oil
  • 1 tsp. lemon zest
  • 1/2 clove garlic, crushed
  • Salt and pepper to taste

Method

  1. Heat the oil in a skillet over medium heat. Add the Quorn Naked Chik'n Cutlets and saute for 7-8 minutes until golden brown, turning frequently.
  2. Prepare the salad by carefully mixing all the ingredients together.
  3. In a separate bowl, combine the dressing ingredients well and drizzle over the salad. Top with the sliced Quorn Chik'n.
  4. Optional: try marinating the Quorn Naked Chik'n Cutlets in Sriracha hot sauce and maple syrup before sauteing.
